Sometimes there is nothing better then a simple pasta from minimal and delicious ingredients. I found this recipe here and I knew right away it would be something I would love, based on the use of goat cheese and roasted red peppers. Pulling everything together for this recipe was made much easier with the use of a store-bought jar of roasted red peppers, but you could also make these yourself. This one will definitely be on the list of new favourites, and I highly recommend you try this one out the next time you want to make an easy pasta dish.

You will need:
- 1 jar roasted red peppers
- 2 tbsp olive oil
- 1 small sweet onion diced
- 2 cloves of garlic – minced
- 1 cup of fat free half & half
- 1 package herbed goat cheese
- 2/3 cup grated parmigiano cheese
- 1 package linguine (we used whole wheat) cooked to al dente
- salt and pepper to taste
Directions:
- Sauté onions and garlic in olive oil for 7-10 minutes until tender
- Bring large pot to a boil and add pasta
- Add half & half, goat cheese and s & p
- Stir until goat cheese is melted and keep warm over low heat
- Add in sliced peppers and parmigiano and stir
- Pour into a blender or use hand mixer to blend until desired texture (we preferred slightly chunky)
- Strain pasta and put back in pot
- Pour sauce over the pasta and stir
- Plate and add parsley and parm as desired

Even I would like this!! Might need to cook it for the family once I’m home!! Goat cheese makes any dish that much better!
I rolled a goat chesee log in chopped pistachios and dried cranberries for a party a couple weeks ago. It was a huge hit and a great salty, sweet/ creamy, crunchy combination. The goat chesee needs to sit out a bit to soften up and you really need to push those pistachios and cranberries into it, but still a super easy thing to make.
