I have been on the lookout for some simple summer meals that require minimal ingredients and quick prep time, and if they can lead to easy and delicious leftovers, even better. This recipe is very simple, and extremely tasty. In fact, I don’t think I realized how much flavour you can get out of the zest of a lemon, but I have a feeling it will be incorporated into a lot more meals moving forward.
You will need:
- 1 package linguine
- 3 garlic cloves, chopped
- 1/2 tsp of salt and pepper each
- Olive oil
- 1-2 thinly sliced zucchini’s
- Zest of one lemon
- 1 package of goat cheese
- Optional: chives
Directions:
- Cook the pasta based on package instructions and save 1 cup of cooking water before draining
- Set water aside for later
- While the pasta is cooking, heat oil over medium heat and add sliced zucchini and salt and pepper
- Cook, stirring the zucchini until it is tender and any liquid has evaporated, about 5 minutes
- Stir in the garlic and cook for 1 more minute
- Add all but 2 tablespoons of the goat cheese to the strained pasta
- Add the reserved cooking water, and salt & pepper to taste
- Stir until fully mixed and covering the pasta
- Serve the pasta topped with the zucchini, lemon zest, and remaining 2 tablespoons of goat cheese – chives optional to top






YUMMM yum yum yummmm. It’s a good and bad thing I found this post & recipe tonight! I had only just said to my bf how I have been craving a pasta dish. We try to stay away from Pasta during the week but I think I’ll have to make an exception with this recipe
