Turkey Avocado Panini

I had been seeing so many yummy looking recipes for panini sandwiches with avocado in them, it was only a matter of time before I broke down and gave one of them a try myself.  I used this recipe here with almost no alterations, and it turned out absolutely delicious. It is just the right mix of creamy texture with the avocado spread and tang from the roasted red peppers. This is one sandwich that will definitely become part of our regular rotation in the future.

You will need (makes 4 small/medium sized sandwiches):

  • 1 + 1/2 avocados
  • 1/3 cup mayo
  • Bread of your choice (we used fresh whole wheat Belgian style loaf)
  • 4 slices provolone cheese
  • Fresh spinach leaves (approx. 1 cup)
  • 8-12 slices thinly sliced turkey
  • 3/4 cup roasted red peppers sliced thinly
Directions:
  1. Mash the avocado and then add mayonnaise together in a bowl until mixed fully
  2. Preheat a panini sandwich press
  3. Slice bread if needed
  4. Lightly oil one side of the bread and place oil side down on press
  5. Layer a provolone cheese slice, spinach leaves, sliced turkey breast, sliced roasted red pepper on each sandwich
  6. Spread the avocado mixture on the cut surface of each top, and place on top of the sandwich
  7. Brush the top with olive oil
  8. Close the panini press and cook until toasted and crisp, with golden brown grill marks – about 5 to 8 minutes

    Oh my, avocado is one of my favourite foods to eat!!! I LOVE sandwiches of any type also, so put avocado in any sandwich and I’m drooling. I’ll definitely have to try this!

    Your panini looks SO MUCH more amazing than the “professional” photo on All Recipe’s site. As a side note, how do you like your panini maker? I’ve been toying with the idea of getting one, but haven’t pulled the trigger!

      hi Becky! Thanks so much! We absolutely love our press, it is the Breville one from Williams Sonoma. We use it all the time, and it is super easy to clean etc, so I vote pull the trigger :)
