Angel Food Cake

I have always loved angel food cake, but until last week had never even considered trying to make it myself. I think it was because I truly love the store bought version and once you add some fresh fruit, I couldn’t imagine how it would taste any better being home made. I should have known that almost every time you make a homemade version of your store bought favourite, it is inevitably even better than the store version. As always, I went for a low maintenance recipe, but this one does require a little bit of extra time, since you need to separate the egg whites and let them sit at room temperature for at least 30 minutes. Other than that, it is simple and delicious and seriously dense. I tried to keep it a bit healthy by just adding fruit, but it would be even more indulgent with ice cream or whipped cream added to it, depending on how bad you want to be (and by bad I mean oh so good!)

You will need:

  • 12 eggs
  • 1 1/4 cups confectioners’ sugar (icing sugar)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons cream of tartar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 cup sugar

Directions:

  1. Separate eggs; discard yolks or refrigerate for another use
  2. Measure egg whites, adding or removing whites as needed until you have 1  + 1/2 cups
  3. Let stand at room temperature for 30 minutes and preheat over to 350 degrees F
  4. While the eggs are sitting, mix confectioners’ sugar and flour together in a mixing bowl and set aside
  5. Add cream of tartar, extracts and salt to egg whites after 30 mins and beat on high-speed
  6. Gradually add sugar, beating until sugar is dissolved and stiff peaks form
  7. Fold in flour mixture, a 1/4 cup at a time
  8. Gently spoon into an ungreased 10-in. tube pan
  9. Cut through batter with a knife to remove air pockets
  10. Bake at 350 degrees F for 40-45 minutes or until cake springs back when lightly touched
  11. Remove and immediately invert pan
  12. Let cool completely before removing cake from pan
