As I have shown you before, I love appetizers and if I had my way, many of my meals would consist exclusively of them. I am always on the look out for fast creations like these ones here, that involve some of my favourite flavours and simple handling for guests. This recipe was a bonus, since I was able to use all items on hand from either our garden or our kitchen, with the exception of the cheese. I have made these three times already since my first go around, and they seem to taste even better if you can let them marinate for even five minutes in the bowl before popping them on the skewers.
Enjoy!
You will need:
- 20 grape tomatoes
- 10 ounces mozzarella cheese, cubed into 20 pieces
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh basil leaves, chopped
- 1 pinch salt
- 1 pinch ground black pepper
- 20 toothpicks
Directions:
- Mix tomatoes, mozzarella, oil, basil, S & P together in a bowl and ensure everything is fully coated
- Spear one tomato and piece of mozzarella per toothpick and serve

It’s cool to see it done just slightly differently. I use whole basil leaves on the skewers and sometimes add sun dried tomatoes.
Either way, always a hit.
I love these variations, and I LOVE sun dried tomatoes, will definitely be trying that version as well!

This is one of my favourite appetizers! I LOVE basil and any type of cheese!! I agree, I could eat apps for my main courses. Once a week, my Man and I will do a charcuterie meal with cheeses, salamis, veggies, dips and small apps like this one. So yummy!!
