Antojitos

There are a lot of different versions of antojitos you can make, but I have been making this version for years and it is such a delicious treat. I put these together to bring to a party last weekend, and they are the perfect travelling appetizer since you can pre make everything and simply heat them up and cut them when you arrive. They are so delicious warm, but a tad messy, so you can even heat and cut them beforehand if it is easier, and they are delicious once they have cooled as well, and much easier to handle.

Enjoy!

You will need:

  • 1 red pepper & 1 green pepper
  • Light cream cheese
  • Shredded cheddar cheese
  • Shredded carrots
  • Green onions
  • Wraps of your choice (I prefer spinach wraps for colour and flavour)

Directions:

  1. Dice the peppers, green onions and carrots and put aside
  2. Spread a thin layer of cream cheese across the wrap
  3. Sprinkle grated cheddar cheese on top of the cream cheese
  4. Add veggies as much as desired of each in a thin layer on top of the cheese
  5. Roll wrap tightly
  6. Heat at 400 degrees for 7-10 minutes until cheese is melted
  7. Slice into rolls and serve

Optional: side of sour cream/salsa for dipping
