Thumbprint Scones

My inspiration for recipes I make for the blog come from all over the place. Sometimes, they are tried and true favourites I have been making forever, sometimes they are something people recommended, and sometimes simply an image I am drooling over. In this case however, it came from an attempt to replicate something I tasted and loved. Generally speaking, the food at Starbucks and Second Cup (for my Canadian readers) is somewhat underwhelming. However, last week I saw these delicious looking thumbprint scones at my local Starbucks and had to give them a try. It was love at first bite, as they combine the unique taste of scones (which I then remembered my mom used to make frequently as a kid) with the deliciousness of my favourite raspberry jam, making them taste very much like my all time favourite cookie, Empire Cookies. I followed this recipe and was very pleased with the results.

Scones are so easy to make and you can use any type of jam you like in the middle, I am partial to raspberry, or a combination of a few types if you like. The sugar crystals make them extra special, but icing sugar would be equally delicious if you don’t have sugar crystals on hand.

You will need:

  • 3 1/2 cups flour
  • 2 tablespoons baking powder
  • 1/2 cup plus 2 tablespoons unsalted butter
  • 1/2 cup sugar
  • 1 1/3 c half and half cream
  • 1 jar raspberry fruit spread or raspberry jam
  • sugar for sprinkling

Directions:

  1. Preheat the oven to 400 degrees
  2. Comine dry ingredients together
  3. Grate cold butter (just with a simple cheese grater) and add to the dry mixture and mix well
  4. Add in cream and knead gently until dough forms
  5. Sprinkle flour on a cutting board and knead out evenly
  6. Cut into desired sized circles (I used the top of a mason jar as it provided the desired size and popped out the cutouts easily)
  7. Let stand for 15 minutes, if the cooking area is warm throw into the fridge
  8. Press down the center of each scone with a spoon and sprinkle sugar crystals
  9. Bake for 10 minutes
  10. Remove and press down on the same area and add desired amount of jam to each scone
  11. Bake for 4-5 more minutes
  12. Remove and let stand for 5 minutes (jam can be very hot) and serve while still warm

    These look SO yummy! I’ve been doing this more and more lately – tasting something I love and then trying to recreate it on my own. I did that with California Pizza Kitchen’s BBQ chicken pizza and now I haven’t been there for a long time because I can make my fav pizza at home! These sound super simple, pinning them to try later :)
