Smoked Salmon Frittata

Smoked salmon is one of my all time favourite snacks, and when I saw this recipe that allowed me to make a delicious breakfast treat with all my favourite things, I knew it would be a winner. I adapted this recipe from here, making healthy substitutions where possible (milk for cream, light cream cheese, etc.) and it was still an incredibly indulgent and delicious breakfast treat. This would be the perfect thing to make for your next brunch, since it is equally delicious cold, allowing you to do all the prep beforehand.

You will need:

  • 4 tablespoons olive oil
  • 1/4 medium onion, chopped
  • salt and pepper to taste
  • 4 ounces pepper smoked salmon
  • 3 tablespoons of capers
  • 6-8 eggs
  • 4 tablespoons milk
  • 1/2 (8 ounce) package of light cream cheese, cubed

Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C)
  2. Heat olive oil in an 8 inch oven-safe skillet over medium heat
  3. Add onion, and season with a little salt and pepper, stirring until translucent
  4. Add the salmon and capers; cook and stir briefly to release the flavors
  5. Whisk together the eggs and milk
  6. Pour over the salmon, capers and onion, and stir gently
  7. Scatter cubes of cream cheese over the top
  8. Cook over medium heat without stirring, until the edges appear firm
  9. Place the skillet in the preheated oven, and bake for 20 minutes, or until nicely browned and puffed
  10. Flip onto a serving plate, and cut into wedges to serve

    Nice!
    My mother in law makes an app that is has the exact same ingredients with the addition of round pumpernickel canapes and replacing the regular cream cheese for mascarpone.
    I wish I liked smoked salmon!!
