No-Bake Coconut Bars

I have a serious love affair with all things coconut, so when you hand me a no bake recipe including one of my favourite things, you better believe I am going to make it. This was so simple to make, and in fact the only challenging part was figuring out what coconut oil looked like at the grocery store, because I had never seen it before. But you won’t have that problem (refer to the picture below), and once you pick up the coconut oil and maple syrup, you will be set to make many more batches of this delicious treat like I have. In truth, since I made this batch shown here, I have already made two more, setting myself up for a serious addiction in the making.

You will need:

  • 1 cup shredded coconut (unsweetened) – I use a little more than this, just work with the consistency and see what you think (approx. 1 + 1/4 cup in my case or one bag of coconut)
  • 1/4 cup pure maple syrup
  • 2 tbsp virgin coconut oil
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt

Makes 6-8 bars

Directions:

  1. Mix all the ingredients together, ensuring everything is evenly mixed (can use a processor, I did this by hand)
  2. Mash into a 5×7 glass container and smooth out
  3. Put the bars into the fridge for 1 hour before eating, or 15-20 minutes in the freezer if you are in a rush
  4. REPEAT.
