Pumpkin Whoopie Pies

At this point I have made a lot of fun desserts, but every once in a while you stumble on one that makes you wonder why you hadn’t tried it earlier. I had never tried a whoopie pie of any kind, but had seen vanilla, chocolate and red velvet ones and always wondered what made them so special. Now I know, it is the unique density of the cake mixed with the cream cheese icing that is unbelievably delicious. This recipe takes a perfect fall mix on whoopee pies adding in pumpkin, and after having several people sample the final results, I promise you will be the hit of your family dinner if you make these for Thanksgiving this weekend!

You will need:

For the Whoopie Pies-

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cinnamon
  • 1 tablespoon ginger
  • 1 tablespoon cloves
  • 2 cups firmly packed dark brown sugar
  • 1 cup vegetable oil
  • 3 cups chilled pumpkin puree
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Maple Cinnamon Cream Cheese Filling-

  • 1 + 1/2 cups confectioners sugar
  • 1/4 cup (1 stick) unsalted butter, softened
  • 4 ounces cream cheese, softened (half of a brick)
  • 1/2 teaspoon pure maple extract
  • 1/4 teaspoon cinnamon

Directions:

  1. Preheat oven to 350 degrees
  2. Line two baking sheets with parchment paper
  3. In a large bowl combine flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves together and set aside
  4. Mix the brown sugar and oil together until combined
  5. Add the pumpkin puree and mix to combine thoroughly
  6. Add the eggs and vanilla and mix until combined
  7. Add the flour mixture to the pumpkin mixture and mix until completely combined
  8. Drop heaping tablespoons of the dough onto the prepared baking sheets, approx 1-inch apart
  9. Bake for 12-14 minutes, until the cookies are just starting to crack on top (test with toothpick)
  10. Remove from oven and let cool completely on the pan

For the Icing:

  1. Sift confectioners sugar into a medium bowl and set aside
  2. Beat the butter until it is completely smooth, with no visible lumps
  3. Add cream cheese and beat until combined
  4. Add confectioners sugar, maple extra and cinnamon and beat until smooth

Assembling the Pies:

  1. Turn half of the cooled cookies upside down, flat side facing up
  2. Use a tablespoon to drop a large dollop of filling onto the flat side of the cookie
  3. Place another cookie, flat side down, on top of the filling
  4. Press down slightly so that the filling spreads to the edges of the cookie
  5. Repeat until all cookies are used
  6. Place whoopie pies into the refrigerator for 30 minutes to firm up before serving
