Zucchini Boats

I have a serious love for zucchini (as documented with this recipe here) and when I saw the opportunity to combine cheese and tomatoes with them using this recipe, I knew I was sold before I even tasted them. I made these the other day as an afternoon snack, but they would be great as a side dish to a meal too. What other things do you like to do with Zucchini’s? I am always on the hunt for the next favourite recipe!

Enjoy!

You will need:

  • As many zucchini’s as you like
  • 3 plum tomatoes per zucchini (halved)
  • Olive Oil, Crushed Garlic and S&P
  • Bread crumbs
  • Grated Mozzarella

Directions:

  1. Preheat the oven to 350 degrees
  2. Just cut a zucchini in half lengthwise and trim the ends
  3. Scoop out the center where the seeds are with a spoon
  4. Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper
  5. Arrange halved grape tomatoes into the grooves, sprinkle with bread crumbs and bake for about 30 minutes
  6. Remove and place grated mozzarella in between the tomatoes, place them back in, but now under the broiler til golden and bubbling
  7. Remove and drizzle with olive oil and a sprinkling of grated parmesan

    Kendall this looks so yummie. What I love it to fill it with a mix of hamburger, rice and veggies, that is super delicous, you should try it out :-)
