With the rainy weather we have been experiencing lately, barbecuing has been out of the question. In fact, we had to secure ours on the balcony the other night just to make sure it didn’t blow away in the storm this week. On the bright side, this makes me look for some creative recipes that can be done within the warmth of our kitchen. I have been making this recipe for a long time, and it is one of the easiest meals I know. It takes about an hour from end to end, but the actual prep and ingredients required are minimal, and we always have lots of leftovers, which makes my husband very happy.
Enjoy!
You will need:
- 3 pounds boneless, skinless chicken thighs (about 12-14 pieces)
- 3/4 cup ketchup
- 1/2 cup salsa
- 1/4 cup honey
- 1 tbsp Dijon mustard
- 1 tsp chili powder
- 1/2 tsp ground cumin
Directions:
- Preheat over to 400 degrees
- Arrange thighs in a single layer in a 13×9 pyrex baking dish and set aside
- In a bowl mix all ingredients until well blended
- Pour sauce over chicken and rotate to cover both sides of the thighs
- Bake, uncovered for 45 minutes
- Serve with your choice of sides (we prefer rice)
